Whoa man. Talk about good eatin! I had the opportunity to check out Sal’s food truck when I was visiting St. Paul this past winter and I kept going back to the window to try more! First of all, they serve what amounts to a salad on a bun and they call it a Caprese Slider. This basically consists of a nice thick slice of tomato, slices of fresh mozzarella, and basil drizzled with extra virgin olive oil and balsamic vinegar. What a juicy, refreshing bite! It was so tasty I didn’t mind the tomato dripping down my chin. Word of advice: order this if you don’t care whether you drip on your clothes and ask for extra napkins. The taste is worth the mess. There’s also a chicken slider and a meatball slider. Let’s talk about the meatballs. I was surprised by the salami and provolone bits mixed with the ground beef and pork, they added a delicious saltiness and I was so impressed I’ve started playing with my own meatball recipe at home(hmmm…broccoli meatballs? Eggplant meatballs? Risotto meatballs?) for now I’ll just get my fix at Sals truck. Do not, whatever you do, walk away without finishing off your meal with either the Nutella filled ravioli or the Zeppole(Italian donuts). Can’t wait to go to the twin cities again and hunt this gem of a food truck down.
