After living in Montana, Arizona, Ohio, Tennessee, Connecticut, New York, Portland, and finally Salem, one thing I missed most from New York was the inimitable wedge.
To make a wedge, you must have the right bread. At first, I had them flown out from NYC; then, I approached area bread brokers until I found one that would handcraft the wedge according to my specifications. Portland French Bakery took on the challenge and now supplies all my breads, including the wedge.
Fresh meats –turkey, chicken, roast beef, corned beef, meatballs– are all cooked in house. The pastrami is a work of art. It takes an 18-day and many-stepped process to make. Cheeses, veggies and dressings complete the recipe for the best wedge imaginable.
Delicious salads are all made in house.
Save room for cannoli. My wife Deb handcrafts them, stuffing her handmade pizzelle with a mix of mascarpone & ricotta cheese.
Eat in, or order ahead (phone or text) for pick up. We also cater for private parties and events.
