History

Established in 2007.

Nobu, the world’s most recognized Japanese restaurant known for its innovative new style Japanese Cuisine, launched its San Diego location in November 2007 at the Hard Rock Hotel San Diego in the heart of the Gaslamp Quarter. With the original in New York, the Nobu brand is now an empire that spans across the globe, offering signature dishes such as Yellowtail Sashimi with Jalapeño, Tiradito Nobu Style, Rock Shrimp Tempura, and Black Cod with Miso. Nobu San Diego also features new creations from the brick oven.

Conveniently located across from the Convention Center, Nobu San Diego is open for dinner nightly at the sushi bar or dining room, for drinks at the bar lounge, or for special events in the private dining room. The Rockwell Group designed space is full of elements like the onyx sushi bar and the fish basket pendant lights which are evocative of its sister properties.

Nobuyuki «Nobu» Matsuhisa Chef/​Owner

Born and raised in Japan, apprenticed in the sushi bars of Tokyo before he ventured overseas to Lima, Peru. Classically trained, Matsuhisa was challenged by the culture and regional ingredients that contributed to inventive style. Thereafter, he continued to Buenos Aires, Argentina, then back to Japan, Alaska and finally, Los Angeles where he opened his restaurant in 1987.

In 1998, Los Angeles Times Magazine included him among Southern California’s rising stars, while in 1993, New York Times chose Matsuhisa as one of the Top 10 restaurant destinations of the world. In 1994, New York City saw the opening of Nobu in partnership with actor Robert DeNiro. His restaurant in New York City became «The Best New Restaurant» by The James Beard Foundation in 1995. Since opening in New York City, he continued to open in number of locations in the world.
