What is porchetta?
Porchetta is an Italian culinary tradition that involves roasting either a whole suckling pig, or, as we do at The Cultured Pig, a whole pork loin wrapped in a large slab of pork belly.
At The Cultured Pig, our porchetta sandwiches are culturally inspired since many cultures have their own version of a roast pig. Our process involves seasoning the pork with either a rub or a marinade, slow roasting it until melt-in-your-mouth tender, and then blast it at a high temperature so the skin will develop into perfect cracklings. It is then sliced and put into a sandwich with homemade ciabatta bread and an assortment of pickled or caramelized toppings to harmonize with the flavor of the meat.
