The ethical, environmental and nutritional implications of cuisine are of paramount importance to both Brett and Nathan. The vast majority of Frisee’s produce, wines, meats, and seafood are free-​range, line-​caught, organic, biodynamic, and/​or farmed using sustainable methods.
