FRESH — We make our noodles on the truck, every day. Fresh noodles have an unmistakable «bounce» to them that day-​old noodles do not. You’ll notice the difference.

FAST– Whether you’re in a rush or youre taking your time, we’re a dependable place to grab a bite. It’s never more than a 6 minute wait — that’s the cooking time for noodles fresh from the Yamato machine.

FUN — As if making and eating noodles wasn’t already enough, we’ve dedicated ourselves to offering an entertaining atmosphere. With a beer/​wine/​sake liscense coming to our truck park in early 2015, it’s going to be a party, ya’ll!

History

Established in 2015.

Odang Udon is a food truck (a trailer technically) that serves up on-​the-​spot freshly made udon dishes, both traditional and eccentric. A collaborative effort between longtime friends Matt Palley and Ben Falik, Odang is one of very few spots in the Bay Area that makes noodles fresh to order daily. It all started when Matt was visiting his girlfriend’s family in Hawaii. A popular udon spot in the area was known for serving up fresh noodles on the spot, in a specific regional style, and attracting massive lines daily. After a little background research, Matt traced the lineage of that particular udon, the Sanuki udon, to the Kagawa prefecture of Japan.

The Sanuki udon, characterized by its square shape and broad flat edges, makes it so that the broth and toppings coalesce on the surface area of the noodle. The result is a noodle that is bouncier, flavorful and smacks a bit harder than usual.
