Umai () in Japanese, is defined as «delicious and great.»
When we were growing up, there learned that there were four basic tastes: salty, sweet, sour and bitter.
However, there is also fifth basic taste we were not taught growing up.
…This lesser known taste is called «umami» (discovered by a Japanese scientist named Kitunae Ikeda 1908) and it is what stimulates our appetite, appealing for the savoriness of food. «Umami» itself is a compound Japanese word, from the root words, «umai» meaning «delicious,» and «mi,» meaning «essence.»
