Boldo is an earth-to-table restaurant that recently launched in the bustling East End of downtown Santa Ana.
At Boldo, we dish up a variety of hot and cold delecta-Bols. A Bol is a fresh, carefully prepared mix of whole foods, sourced directly from our harvest partners and served in an eco-friendly bowl.
Our philosophy is rooted in the Slow Food Movement and inspired by the great wisdom of Hippocrates: «Let food be thy medicine, and medicine be thy food.»
We have tailored our culinary approach to reflect the following holistic principles:

Currently, we are building partnerships with several bold family farmers, organic growers, ranchers, foragers, fishermen, and other food-cultivating entities in the greater Orange County region to create a Restaurant-Supported Agriculture (RSA) Program.
We are also in the process of developing our OC Yard Farming Initiative, which will allow resident gardeners to sell or barter their produce at our restaurant as well as donate any excess to organizations like OC Food Access Coalition.

Business Owner
I have been enthusiastically in the Food Business for over 35 years in various capacity’s. I am a graduate of the New York Restaurant School and have worked in kitchen’s in, New York, Los Angeles, Seattle, France, and Belgium. I have a passion for cooking product that has just been harvested from my own back yard, my neighbor’s, or a local family farm. I have been married to my best friend for 32 years and have two beautiful daughters.
