Left Bank Butchery is located in Saxapahaw’s former textile mill and serves the community that raises our delicious and sustainable meat. Our butcher shop is built on the foundations of supporting local agriculture, providing healthy food for our community, educating and engaging our customers in the many aspects of sustainable farming and whole animal butchery, and doing all of it with a smile.

History

Established in 2014.

We arrived at butchery through our love of agriculture. Ross spent five years working at Cane Creek and Braeburn Farms. Aron and Lisa were always strong supporters of local agriculture, and these farms in particular. Over the years, we realized that despite having a world-​class product and a community willing to support local farms, we needed a better way to get this food to our customers. Ross began doing whole animal butchery and charcuterie at the Eddy Pub and General Store in Saxapahaw. What started as a cost-​saving measure, aimed at allowing the restaurants to focus on sustainable meat, quickly grew into a larger idea and Left Bank Butchery was born.

As Doc, owner of Braeburn Farm, likes to say, «he didn’t know the front end from the ass end of a cow when he showed up.» But Doc gave him a job anyway, and for five years Ross worked at Braeburn and Cane Creek Farm, learning everything from grazing strategies to carcass qualities. At some point, Ross started butchering and making charcuterie at The Eddy. Time on the farm gave way to time in the kitchen (he could do less damage with dead animals than with live ones), and a few years later, Left Bank Butchery was hatched.
