At Preservation, we cure it, pickle it, and smoke it because we love it. We serve delicious New American cuisine prepared from the finest ingredients.
We take pride in sourcing only the highest quality ingredients from reputable suppliers in the South Florida area. We have an undying passion for taking these products and transforming them by «Curing, Pickling, and Smoking» on premise to create a menu that is constantly evolving and progressing towards our guests wants and desires. From cured meat sandwiches to savory smoked tomato soup, we have something to please every palate, and wine and beer to pair it with. Open for brunch, lunch, & dinner.
Often guests at Preservation inquire as to whether or not everything on the menu is «cured, pickled, or smoked», that is certainly not the case. Many items do see some form of these processes, simply to highlight fresh seafood, produce, and meats and to create dishes that stimulate all senses and invoke a memorable, exciting experience.
History
Established in 2013.
Throughout history, techniques of preservation have been refined and distinguished by many cultures, and these techniques shall never be forgotten. Inside the walls of Preservation, these techniques are cherished and have been given new life at the hands of The Culinary Institute of America, Hyde Park, NY, Graduates Executive Chef Ryan Harrison and Owner Nicole Richaud. Together they have created a style of dining that exemplifies the classic characteristics of a French Bistro with a modern, chic influence.
Preparing products from their purest state is the number one priority for the team at Preservation. Using influences from their upbringings and vast culinary experiences, our team has created a phenomenal and inspired restaurant.

Business Owner
Chef Ryan Harrison and owner Nicole Richaud have a long history in the restaurant industry. As graduates of the CIA in New York, they have the skills, education, and talent to deliver a unique dining experience at Preservation. The idea of the preservation-based concept was one they realized fit neatly into the South Florida area.
In addition to preparing excellent cuisine, Ryan and Nicole know the importance of great customer service in the restaurant industry. The entire staff is dedicated to delivering a fantastic dining experience to every customer, ensuring the highest satisfaction whenever you eat at Preservation. We look forward to serving you soon.
