We specialize in Sushi and Kushiyaki in addition to the variety of Appetizers. There have been a very few changes in our regular menu categories, but our special menu changes every day depending on what kinds of fresh and in season ingredients we can get in the morning at the market. History

Established in 1986.

. In 1977, Masayuki «Nick» Niikura, who had owned a restaurant in Tokyo before coming into the United Stares, opened sushi restaurant called «Niikura» which was the one of the first sushi restaurant in San Fernando Valley. After 9 years later of its opening, Niikura opened «Kushiyu» as his 2nd restaurant in the Valley introducing kushiyaki which is Japanese style charbroiled items on skewers. Within a couple of month of opening «Kushiyu», he quickly realized that serving only kushiyaki would not be enough to sustain his new venture. So he combined his small sushi restaurant «Niikura» and brand new kushiyaki restaurant «Kushiyu» into one. That was the grand debut of «Kushiyu» in 1988. Since then, «Kushiyu» has developed an amazingly devoted clientele that consistently fills the seats. As a result of his success, «Kushiyu» went through major expansion and refurbishing the double size in 2002 and firmly established as one of the premier Japanese restaurant in the Valley.

Of course, the founder and executive chef, Nick Niikura is the owner of Kushiyu; however, the longest worker «Taka» who is the head of the chefs and food management, is the co-​owner of the «Kushiyu» too. Taka actually began his association with Niikura since 1975 at Niikura’s restaurant in Japan. General Manager here since the major expansion is «Shawn» who is the head of the beverage and service management, in the addition to the Kushiyu’s administrative needs, now also is the co-​owner of «Kushiyu». Shawn graduated from UNLV with Hotel/​Restaurant administration degree and have studied in Ecole Hoteliere Lausanne in Switzerland. He had several experiences in the other hotel and restaurant before he join to the Kushiyu.
