Guest Chefs at each opening provide unique multi-course menus paired with wines, beers, or cocktails. Max 50 guests sit at one table. Usually on Thursday nights but other nights pop occasionally. Check Facebook to updates. Prices set based on menu usually between $ 75-$ 100 per person including wine. (UPDATE) Now available by reservation for private events including rehearsal dinners.
History
Established in 2011.
Aviation is a guest chef pop up restaurant inside a private room at Nieuport 17. It only opens when there is a guest chef lined up. Up to 50 guests sit a one long communal table and enjoy the chefs creations along with wine, beer or cocktails specifically paired for the event.

Business Owner
Cameron started in the restauarant business in 1997 when he opened The Rockin’ Taco Cantina and then Chomp Sushi in 2001. He sold both these Fullerton landmarks in 2005. In 2010 the Founder of Nieuport 17 (a long time family friend) Bill Bettis asked Cameron to step in to help breathe new life into the classic 42 year old restaurant. So starting is 2010 the turnaround began. Nieuport 17 is now attracting a new crowd as well as their old regulars who enjoy the Classic Cocktails, Craft Beers, Great Steaks and Seafood along with the new creations of Chef Marco Colin.
In 2011 Cameron launched Aviation Guest Chef Pop up in a private room inside Nieuport 17. This pop up is attracting great local chefs and foodies who love the ever changing menu.
