Borrowing the Latin word for Earth in its name, Terra Bistro has been transforming whole foods into gourmet innovations for more than 17 years. Today, Terra Bistro is still considered a leader in the gourmet green movement. Our menus are 100% all — natural and our recipes utilize 85% to 100% certified organic ingredients. Over the years Terra Bistro has also lead the charge to embrace earth — friendly and humane values in operating our business. Our chef diligently seeks ingredients from sustainable sources and humane conditions. All seafood on our menu is Seafood Watch approved and/​or a member of the CleanFish Alliance. Terra Bistro employs an in-​house state-​of-​the art water purification and bottling system, which each year prevents thousands of bottles from entering our local landfill. We are also partnered with the Humane Society of the United States and the ProtectSeals campaign. World-​renowned and a local favorite, Terra Bistro is a must for the green-​conscious «foodie».

History

Established in 1992.

In 1992, Terra Bistro began as a modest but cutting-​edge casual restaurant offering «Spa Cuisine». Since then, Terra Bistro has gone through many evolutions while always focusing on health conscious and environmentally conscious gourmet fare. Today Terra Bistro stands among the top of Vail’s fine dining icons and is a leader in the gourmet green conscious movement.

Meet the Business Owner

Business Owner

Kevin Nelson began working as a line cook at Terra Bistro in 1993 and immediately discovered his passion for gourmet health-​conscious cuisine. By 1998 Mr. Nelson had risen to Executive Chef and later in 2006 Chef Nelson became a partner in Terra Bistro. Additionally, Chef Nelson is a contributing chef for the «Healthy Vail Kids Cooking Camp», which teaches local children alternative insights into healthy eating and activities. Also in 2006, Nelson joined as a board member with the Taste of Vail, a local epicurean event, which raises money for local charities and showcases the talents of local chefs. In 2007 Chef Nelson was one of five featured Chefs for «Ein Prosit», Food and Wine Festival in Valbruna, Italy and in 2008 he was a featured chef for Festival Gourmet International in Puerto Vallarta. Nelson has also been a contributing chef for a member dinner at the James Beard House.
