Those are a pale imitation of the «Pokey O»: a generous scoop of Blue Bell ice cream sandwiched between two soft, freshly-​baked cookies. What’s more, you can choose from a rotating list of cookie varieties and ice cream flavors. They’re even known to have gluten-​free cookies and the deeper cuts of Blue Bell flavors that you can’t find in grocery stores.

If you’re yearning for something sweet and original, this if your place. Tried it today for the first time and I was not disappointed. The two gentleman who helped us were very friendly and efficient. I love the concept of them being mobile and the fact that this particular day they were in front of a coffee shop, couldn’t be more perfect for me. I had the butter pecan and snicker doodle combo and it was DELISH! Keep it up guys!

PokeyO’s seriously has the best ice cream sandwiches. They always have varying flavors of cookies and ice cream, you can switch up what you get every time! The students that work there give the best customer service too! I recommend PokeyO’s to everyone who I hear say has never tried it before.

Who knew an ice cream sandwich could be so good? Caught this truck in front of Dichotomy for a perfect food pairing of coffee, mint chocolate chip cookies and strawberry iced cream. A match made in heaven. Friendly staff.

Pokey O’s is absolutely delicious! It has been in Waco since about April and has always had great service. The employees are so friendly and make you feel right at home. They change up the flavors so it’s different every time you go. The cookie flavors range from classic chocolate chip to the more unique cappuccino chocolate chip. I highly recommend Pokey O’s to anyone in Waco!

Cinnamon ice cream on a snicker doodle cookie. The ice cream was very mild cinnamon, the cookie soft and pliable. Well done. Came for the magnolia furniture and love the ice cream sandwich.
If you like ice cream or ice cream sandwiches this is your place. The people running the truck are very pleasant. Great finishing touch for a meal.

Took a particular liking to this food truck when I saw them at Brazos Nights. Homemade cookies and Blue Bell ice cream. I had sugar cookie and strawberry ice cream and my mother had chocolate chip and vanilla. They were both great, and my choice was exceptional. The cookies had a great consistency that paired nicely with the ice cream and were very large for the price. Easily could have split one but saw most people devour their own! The couple running it were very sweet as well. Would recommend a visit.
