History

Established in 2014.

One of Dan Stokes first jobs was working in the kitchen at Abe and Louie’s. However, it was at The Franklin Café– the beloved south end institution– where things really clicked for Dan. Dan left Franklin to attend culinary school at the French Culinary Institute in New York City.

He began to work at the Harrison under the helm of chef Joey Campanaro to become the restaurant’s sous chef, then moved to their bold new Italian restaurant, Pace, where he realized his enthusiasm for Italian cuisine. A desire to travel brought Dan and his family to Florence, Italy where he interned at Trattoria Zibibbo under renowned Florentine legend, Benedetta Vitali.

Upon return to the States, Dan began to formulate his plan to open a small restaurant shaped by the neighborhood places he worked at in New York and Boston, as well as his time spent in Italy. Red Bird emerges from the former Tuscan Grill space and brings Dan’s story full circle: a neighborhood spot by way of Tuscany.

Business Owner

Red Bird chef & owner, Dan Stokes, grew up in the suburbs of St. Louis, Missouri. Undergraduate studies brought Dan to Boston College where he graduated with a B.A. in English and a minor in Women’s Studies. The service industry and the notion of service itself was always present in Dan’s upbringing; his father and siblings have all worked in the beer industry.
