Chef Robert Cabeca

History

Established in 2013.

This business has closed permanently as of 10÷31÷14.

Robert Cabeca, pastry chef and chocolatier, opened Chocolate Crust in February 2013. Chef Cabeca also owned the renowned specialty chocolate shop, COCOVA, in DuPont Circle/​Adams Morgan DC for three years until 11÷3÷14.

The name Chocolate Crust came from Chef Cabeca’s creation of a savory Chocolate Crusted Pizza. Chocolate really does go with everything!

Chef Cabeca created the original Chocolate Doissant which is a croissant/​donut combination that some akin to the «Cronut». However this specialty has very different properties which create distinct layers of delicate pastry.

Robert Cabeca has been working with chocolate for over 25 years. Owner of COCOVA in Adams Morgan, he decided to create a place where the experience of chocolate is infused into everyday foods from Hamburgers to Pizza and Macaroni and Cheese!

Having no formal culinary training, Robert has proven himself an expert in the field of chocolate, pastry, and cooking. We hope you come by and check us out and enjoy some really special chocolate.
