Bill the Butcher – Woodinville Shop

It says CLOSED on the Unilocal but it’s definitely open I’m in line and about to buy some bacon! However, there is only one person working here… maybe it’s «Bill»?
I love this place for meat I wish it wasn’t on the verge of being closed. They have phenomenal meat with no hormones and no antibiotics!
I see a bottle of Makers Mark, free shots?! Thanks Bill.

Hole in the wall I passed on my way to the wineries. Fresh meat, but a little on the pricy side. The best thing was their raw milk. They have them delivered on every Tuesdays and you can order and they’ll save you some. I was able to make some chai and it tasted delicious! Worth checking them out.

Best steaks I’ve ever had, and this is the only chicken I’m able to get my daughter to eat. Highly recommend!

The first thing I noticed when I walked to the front door was the amazing aroma of a smoker and MEAT!
Ryan is the man, and bill the butcher is where its at!
Amazing organic meats. Bill the Butcher has an out of this world cured flavored bacon selection, paleo beef jerky and spicy hawaiian flavored jerky!
Ryan was super knowledgeable, and friendly. I will definitely be back!

Very hard to find a good organic butcher anymore. Bill the Butcher with Ryan the manager at the healm is a great place to stock up on the best meats! We always get two giant tenderloin steaks and have the best dinners!
Selection could be better, you can catch the store in a low-​inventory period, but we go there all the time so maybe we see more of the inventory fluctuations than most.
Having been to other Bill the Butcher locations, I can tell you that this is the one you want! Best house-​made smoked bacon!

Really good quality meat and service here! The employees seemed to be rather knowledgeable and helpful in regards to cooking the meat too… and they actually seemed proud of their product and not as though they were watching the clock waiting for the end of their shift!
My husband loved walking in here smelling meat being smoked outside and then seeing the selection they had available too. I was surprised to see rabbit and will definitely remember this is a good spot to get some good quality, hard to find meats! We decided to try the jerky they made too and it was excellent! Nothing like that dry stuff in bags from the supermarket; this stuff was meaty, tender and delicious!
There are also some meat «extras» available here like oils, etc. Fun décor in the shop as well.
I’d recommend calling ahead if you’re looking for something specific because depending on the delivery schedule they may or may not have what you’re looking for. But, even if they don’t, there is probably something tasty here you could get instead!

At one point I could not reccomend this place higher. And honestly, I still give it 2 stars instead of 1 because the product is still top quality. However, the service is horrible.
In the past, I could walk in, be on a first name basis with the staff, call ahead with my order, ask for a reccomendation, or reserve a special cut for a special occasion. Apparently that no longer is the way things are done.
Bill’s has had a fairly long and ugly legal battle between two of the partners, and I think that has taken the focus of the leaders off the stores and instead put it on the fight. The staff in the Woodinville store has been a revolving door who’s attitude to customer service seems to have gotten worse with every new hire. Without someone who has been there a long time to show the new staff how it’s done, the culture of ambivalance will prevail. no standards.
Today I find out they lost my Rib order I reserved 3 weeks ago, and acted like I was the one who forgot to order and was trying to «bully» them into giving me one anyway. in short, they treated me like I was lieing to them. Unacceptable.
In today’s age of computer technology, you would assume that they would have at minimum an excel spreadsheet in their computer to keep track of their advance orders, but I honestly think they must be writing down their reservations on sticky notes.
no matter what the reason, I will not be going back nor will I reccomend them any longer. it is too bad to, I have never had better beef, but they surely arent the only outlet for their suppliers. I guess I just have to find the rest.

Hmmmm… I am going to have to come back and re-​review this place. My two star review is because I came in last week for some chicken and there was no chicken. So then I ask for pork and there wasn’t any pork. :(Maybe I don’t get the whole butcher thing but shouldn’t a butcher shop have lots of meat? I usually buy my organic meats at Whole Foods but thought I would give Bill the Butcher a go. To be fair I shall return in hopes of meat being in stock.
Side note, the parking at the Woodinville location is awful and limited and plain dangerous during rush hour.

Let me start by saying that this review has nothing to do with their meat quality, I am sure that it is fine, and I have had their meat before, and enjoyed it. My problem with Bill The Butcher is their lack of transparency. They say they partner with local farmers, ok what farmers, I have asked this question at one of their locations only to be met with resistance. They say their meat is organic grass fed, great, then can I see the label? At one point they had a made up term for their chicken «scavenger chicken»? There is no such thing. The even bigger question I have of this place is are their employees licensed meat cutters? I was at the Redmond location, and their was what looked like a teenager working there cutting meat. Last but not least I believe they are taking advantage of their «grass fed» stance to drive prices sky high, their prices are obscene, $ 9.99 for brisket, are you kidding?! I admire what they are trying to do, but if you own a butcher shop, shouldn’t the people working there really be butchers? If you want grass fed beef, go to whole foods where their people actually have experience, and if you just want a good butcher, go to Top Foods, yes Top Foods is a chain, but they also carry Washington State meat, and their people really know their stuff. The Golden Steer in Bellevue is also a great family run butcher with years of experience.
