History

Established in 1997.

On 22nd of April 1997 I opened the Il Nido — The Nest in Castle Hill. I felt at the time that Castle Hill needed a quality restaurant. A place to enjoy the pleasures of great traditional Italian food. Since then not only has the restaurant achieve its goal, its still is just as enjoyable now as it was then.

I get asked what is does the name mean. «Il Nido» means «the nest» as in a bird’s nest. In this case, it’s an eagle’s nest. Why «eagle», well my family name «Dell’Aquila» literally means from or of the eagle. My vision with Il Nido was to create cosy, comfortable environment to enjoy good food. So the «nest» symbolised a comfortable and familiar place to go to.

The logo, if you look closely, has 3 birds to the left of my logo that symbolise my 3 sons. As you can tell, family is a big deal for me.
