A great place for their delicious tasting menus and special events! I would like to come more regularly but the clientele are really offputting as some are quite rude and snooty. But you can’t blame the venue for that. I’ve been here for cocktails and nibbles, and staff are really lovely and professional. The polenta bites are amazing! I’ve also come for a gin masterclass which was wonderful — it came with appetisers for each course which were divine. Must come back for a regular meal!

booked dinner at must on monday night with a group of friends and was very impressed . between the eight of us i’m pretty sure we tried nearly everything on the menu. our meals came out together and not one person had a bad word to say . drinks were spot on. i was hoping to try the lillet blanc w/thyme & a twist but the lillet rosé was perfect. i am spewing i didn’t pick up a bottle of the red they currently have a ‘spotlight on …’ so woody and perfect for a winter’s night. i have to mention the attentive service. nobody told the staff it was my birthday and the whole table was surprised when the server brought my desert out with a sparkler and started singing ‘happy birthday!’ obviously they had seen me opening presents at the start of the night but that little gesture just topped off an enjoyable evening . we will be returning to must

It’s been a while(maybe years) since we’ve been here — food is still good and the menu doesn’t look like it’s changed much. Great atmosphere but was sat a bit too close to the couple on the table next to us — personal space please. Oh and they forgot to give us bread which every other table had, luckily we weren’t hungry enough to ask for it but still ‘I want my bread!’

This restaurant is warm, cosy and inviting and we had a lovely dinner here. I had the confit duck for my main course and it was delicious. The meat was beautifully tender and easily fell off the bone, and I ate every last bit on my plate! Service was a little brusque but overall it was a great night with excellent food.

Must is a great place to go whether you want to have a Sunday session or a romantic dinner for 2. The food is delicious. On my last visit I had the cheese soufflé which melted in my mouth followed by the quail which was flavorsome and relatively easy to eat(even with the bones). They have an excellent wine selection and are happy to help you find the perfect match for your meal.

Must Wine Bar is one of my favourites and I have been coming here for many years. It is French bistro style food and I have never eaten a bad dish here. The chicken liver parfait is amazing and one of the best in Perth! On this visit I had the fish and it was perfectly cooked. My Mum had the steak and it was perfect! My husband had the duck and it was moist and tender, not dry the way duck can sometimes be. Must have an excellent wine list and you have the option of purchasing bottles to take home too.

We visited Must on the spur of the moment for lunch during the week. Lunch was a much quieter affair than dinner usually is, but the food, the service and overall experience was just as good. I was tempted by the half-price oysters available at lunch, but decided to stick with my tried and true favourite, the angel hair pasta with crab meat. I’m glad I chose the entrée size, as that was plenty, along with a basket of the fabulous crusty bread and butter that Must provide free with every meal. My son Alex thought he needed the main size version of the same dish, but he battled to finish it. Could be that all that delicious bread he scoffed may have had something to do with it :) I had a glass of the Perrier Jouet champagne at $ 13 with my meal, and all in all, it was a simple but wonderful lunch. I absolutely love Must. Whether I pop in with a friend on wintry nights to sample a few choice glasses of red, or linger for hours over a 3 course meal, or drop in for a quick mid week lunch, my experience has always been positive. Head chef Russell Blaikie presents seasonal degustations based on produce available, and there are regular cooking classes, which I also heartily recommend. The service is top notch and the atmosphere is subtly sophisticated. I love that despite all the wonderful things going for it, Must is not pretentious and everyone is made to feel welcome.

Must Winebar in Highgate have just started their new ‘A Taste of Must’ tasting menu, celebrating the best seasonal ingredients matched with wines. On the first Tuesday of every month, one ingredient is highlighted and for this four course tasting it was the very underrated Asparagus. The Appetiser came out first a Blue manna crab custard with asparagus tips and a prosciutto & white asparagus crostada. The crab custard was smooth and creamy, which paired perfectly with the crostada and the ‘Season of Love’ Asparagus Infused Gin Sour. Next came a beautiful Asparagus & shallot tart tartin, mushroom foam and white wine gastrique. This was so good I had to question myself why I don’t eat Asparagus everyday. This was served with a Right Everend V ‘Industria’ Chardonnay from Margaret River, which went down smoothly with the tart. The main was definitely a highlight dish, succulent Middle Eastern Lamb Rump with Asparagus two ways, ’ risotto’ and raw salad shanklish with a walnut tahini. The lamb was perfectly cooked and the flavours of the walnut tahini worked very well. I’m usually not a red wine drinker, however the Rockcliffe ‘Third Reef’ Shiraz paired great with the red meat. To end every menu, there must be dessert. I was wondering how can someone put Asparagus in a dessert? But somehow the chefs at Must came up with a Chocolate ‘aero’, salted caramel ice cream and samphire dish. Samphire is a native succulent, which is also referred to as Sea Asparagus. So that’s where the asparagus came into play! With the dessert came a glass of Rockford ‘Cane Cut’ Semillon from Barossa Valley, which tasted like honey, I really enjoyed it! Overall, an amazing job by Must! I look forward to returning for another ‘A Taste of Must’ night. On Tuesday the 6th of October, I was lucky enough to experience the first of Must Winebar’s seasonally themed 4 course set menu, specially created by Must’s Owner and Head Chef, Russell Blaikie. Chef Russell is all about fresh produce and seasonality and the theme of this Spring night was asparagus — a vegetable prized for its succulent taste and tender texture. We were seated at the Mezzanine level overlooking the busy restaurant. Before I get into the food, I just want to commemorate Russell and his team on the sensational meal — what a well designed menu and organised event. The service was exceptional, food was well presented and tasty, timing of each course was spot on — an all rounded perfect meal(and night out with fellow food lovers). The restaurant has a large dining area but it was still a full house that night. I expect the next 3 events to be sell outs so get in quick to avoid disappointment. To get the night started, the waiters brought out the first course of the night — Blue Manna crab custard served with asparagus and prosciutto and white asparagus crostada. After finishing the silky smooth crab custard I was so convinced this was going to be the highlight of my night. It was simply heavenly! The small shot glass serve was such a taste buds teaser. I’ve had prosciutto wrapped green asparagus before. This white asparagus variation was slightly milder in flavour and a bit more tender than green asparagus. Paired with this course was an asparagus infused gin sour named the ‘Season of Love’. Gin is my go to drink(on par with red wine) so naturally I loved this refreshing and slightly sweet cocktail shot. For entrée, we were served an asparagus and shallot tart tatin topped with mushroom foam and white wine gastrique. Traditionally tart tatins are made with apples or pears. I loved this savoury variation! Sweet and juicy shallots, tender chunky asparagus pieces, fluffy foam infused with mushroom, all strategically arranged on a melt-in-your-mouth pastry base and drizzled with sweet, yet tangy, white wine gastrique. What was there not to love about this course? I couldn’t fault a single thing. Paired with this course was a glass of Right Reverend V ‘Industria’ Chardonnay(Margaret River). I’m not a fan of white wine but this was really something else. Surprisingly enough, I much preferred this to the red wine served with the lamb. For mains, we enjoyed the Middle Eastern spiced lamb rump, asparagus two ways(«risotto» and raw salad), shanklish and walnut tahini. This became my favourite dish upon first bite. The lamb was cooked to perfection!!! Overcooked meat turns me off any restaurant instantly. I have lost count of the number of times I have requested my meat to be medium rare and it has come out almost well done. I loved the amount of detail that went into this dish. Russell requested his chef to hand cut the asparagus into tiny pieces that represented grains of rice to be used in the asparagus«risotto». A glass of Rockcliffe ‘Third Reef’ Shiraz(Great Southern WA) accompanies the lamb. I’m not a lover of dry red wine so I can’t comment on this wine choice. For dessert, we were served a very delicate Chocolate ‘aero’ served with salted caramel ice-cream and samphire(European plant of the parsley family that grows on rocks and cliffs by the sea. Russell called it «Asparagus of the Sea»). We were all wondering at the beginning of the night how Russell would incorporate asparagus into the dessert. No one would have guessed it would be samphire! The chocolate taste was strong and on the bitter end. Well balanced by the sweet and salty ice-cream and salty samphire. What really stood out for me was the frozen chunks of crème fraîche — adding a nice touch of tart/sourness. The best part of dessert was the wine it was paired with. Oh my gosh — Rockford ‘Cane Cut’ Semillon(Barossa Valley) — I love you! It was like drinking a glass of honey. I went through the entire dinner thinking«mmmm this is my favourite dish» and then being pleasantly surprised and blown away by the next dish! Russell will be showcasing 4 main ingredients in this year’s A Taste of Must series. Take a note of the below dates! I have my eyes on the Cheese one especially! Tuesday 6th October — Asparagus Tuesday 10th November — Egg Tuesday 1st December — Cherry Tuesday 5th January — Cheese At a very affordable and reasonable price of $ 65 for 4 courses(additional $ 35 for matching wines), I know I will be running back to taste as many as I can!

The food was quite nice at that place… All the entrées were tasty(we were a table of 7) I especially loved the crab soufflé(and so did the rest of our table) it was beautiful and full of creamy goodness with a good balance of flavours! And the highlight in terms of mains was the angel hair pasta with crab and tomato it definitely was the winner :)

I went here on friday night for drinks. It’s a bright spacious place with eclectic seating — couches and round tables for casual seating, high wooden tables for dining, and other sorts. The drinks list has a variety of cocktails, wines and ciders. The bar menu is decent with popcorn chicken, chicken wings, salads, etc. My friend and I had the white sangria jug for 26 dollars and chicken wings for $ 14. The jug was a decent size but the drink tasted life flavoured water. Awful. After three glasses each we felt nothing. No taste. No toxication. But the chicken wings were amazing. We got 14 chicken wings each and annihilated them in minutes. Like the décor, staff and food. Not the cocktail.

Make sure to start with a Vesper and order the Steak and shoestring fries with pepper sauce with something red in a bottle from France or Chile.

We loved Must Margaret River and her elder sibling equally so! Must MR will always have a special place in my heart. I have become rather predictable with my ‘see duck in menu, must order’ approach. So if you like duck, Must’s Duck Leg Confit is a must! Bonus points for Crispy Black Pig Bacon! Yes, bacon AND duck. My dining companions were jealous but I graciously shared the crispy bacon. It was delish!

Great service, the food was delicious, a large choice of wines. A little bit too loud for a romantic dinner, i didn’t expect that when i first came but then it didn’t bother me at all. It’s not outrageously expensive and it’s totally worth it. I’ll definitely come back. My boyfriend an i had 2 cocktails + a charcuterie plate to share + 2 mains + a bottle of wine for about $ 200.

The answer to where Must I try in Perth is here!(apologies for the bad pun) however if you are after both some gastronomic treats, which are also somehow wonderfully simple and a wine list with some very unique option then you Must look no further(oh yes I did it again) We have been to many of the special dinners when co-owner and head chef guides you through the menu, had romantic dinners and Sunday lunch(through to dinner) sessions and we always find something new and interesting to eat or drink. Of course the staff always make the difference in a great restaurant and again Must delivers good efficient service, who keep it friendly and take time to talk you through the options an generally have an excellent product knowledge.

Maybe it was high expectations, maybe it was an off night but I clearly didn’t enjoy Must as much as other Unilocalers. The Good: Location The lighting/décor Main courses The Bad: Waiting — arrived for our 8:30 booking and our table wasn’t set for the right amount of guests, waiting to be served, waiting for drinks. I shouldn’t have to get a staff members attention to place a dessert order. Service — as mentioned, slow and clumsy. Entrée menu was a little limited, especially if you’re a non-seafood eater like myself. Desserts. I tasted three different desserts and they were all very average. Tough pastry on the tarte tatin, bland chocolate Moelleux. Noise. There should be a greater separation of the dining and bar areas. This was my first time dining at Must and to me it seems like they’re relying on reputation to get the people through the door. Nothing groundbreaking here.

Another Glass of Wine? Why Thanks! Came here with the gf last night for an Anniversary Dinner and Must did not disappoint. Although slightly on the pricey side we left here absolutely full to the brim and had to actually pass on dessert of which we were hoping to try the Warm Chocolate Moelleux with white chocolate icecream.(We ummed and ahhhed but it just wasn’t possible). The wine that was recommended to pair with our meal choices worked in greatly with our food and service was great and very friendly. The bread and butter was brought out promptly as was our water and wine choice shortly after. For entrees we decided on a mix of different types of oysters and Exmouth tiger prawn raviolli. For mains we went with the Grilled Tasmanian Salmon Fillet and the Crispy Free Range Pork Belly dishes which were both SPECIALS on that night. ALLDISHESWEREVERYIMPRESSIVEANDVERYFILLING. I was shocked that I wasn’t able to eat dessert if not a little dissapointed. Even though a bit on the pricey end of the dining scale the service and food was ALLCLASS and I WILLBEBACK.
