The Trailhead Café’s goal is to bring you the best breakfast and lunch experience possible.
We meticulously hand select the producers that grow our fresh produce, and raise our beef, chicken,
and pork; it is guaranteed to be free range, nitrate, steroid, hormone and antibiotic free, humanely
raised, and locally sourced (whenever possible). We grind our own beef and create every recipe
from scratch in our kitchen. This allows us to provide you with the tastiest, healthiest, most
affordable meal possible
History
Established in 2000.
A Trailhead marks the beginning of a journey. The Trailhead Café began as The Lighthouse Café, a light on Main Street, and was renamed to better tell the story of this campus: a place where new journeys begin.
Meet the Business Owner
Hollis H.
Business Owner
Chef Hollis Hunt has had a passion for food since he was young, but his culinary career didn’t begin until the construction market crashed in 2006. After losing everything, Chef Hollis realized he wanted to do what he loved. He left his job as a home builder and took a cashier position at the Lighthouse Café where, in 2011 he would be promoted to Head Chef and Business Manager. Seizing the opportunity to work for classically trained Chef Jamie Degnan and his wife Tiffany Degnan at Origins Catering, Hollis credits them for teaching him many of his culinary and business management skills.
Working closely with others on his team, Chef Hollis helped to create a restaurant that is unique and rivals other great restaurants in Colorado. As the head chef, Hollis developed signature recipes, made in-house, using the finest fresh ingredients available. He is extremely meticulous about hand selecting the producers that grow their fresh produce and raise their beef, chicken, and pork. Chef Hollis
