Recently tried this gem while visiting Boulder. Wow! Sooo good. I highly recommend the Jack tha Peppa. Everything looked amazing. Definitely check this place out.

Had Brie sandwich tonight at the Prospect Food Truck night. Great bread, plenty of brie(just right amount). Nice apple slices on top. Good sandwich.

First time at this food truck and thought it might be neat to try out a fancy grilled cheese sandwich. I got the Salami Momi — grilled sourdough bread, salami, provolone, greens and roasted peppers. It was delish, however, I could only eat half of the sandwich because the sandwich was a bit rich for my taste. I’d gladly get this again… but next time maybe split it with someone and have a ½ sandwich and a side salad instead.

Well isn’t this just the cutest name ever? I stumbled upon this adorable food truck while enjoying an outdoor concert with my parents and boyfriend and couldn’t resist noshing on warm, gooey, perfectly cooked grilled cheese sandwiches. I opted for their Brie’s Knees, which to sum up was to.die.for. WOW! perfectly cooked brie, crisp apples, a delicious fruit preserve served on the finest bread… holy. i’ve died and gone to grilled cheese heaven. seriously. Although from Boulder, this truck frequents downtown Denver, so be sure to try one of their outstanding sammichs :)

During the colder months, the Old Yella dipped in tomato basil soup hits all the right spots. The brown sugar and mustard combo is amazing. It’s so good that I even looked up recipes for tomato basil soup so I could dunk my version of the Old Yella in it. My copycat was pretty darn good but it was a lot of work, so I’d rather hit up Cheese Louise when possible. The Jack tha Peppa and We Be Hammin are also great. I love Cheese!

I’ve become a Cheese Louise regular and I absoultely love their sandwhiches. The Jack the Peppa and the Salami Mammi are two of my favs. Grilled cheese is one of America’s lost arts and Cheese Louise definitely brings this back with amazing bread and creative blends of flavors. Plus they have the best customer service! For the purist, the traditional grilled cheese remains. They pretty much have cheese for everyone!

Absolutely awesome grilled cheese with a flair. And, for you purists, the good ol’ stuff is still available. This truck comes by my office every week or so and I try to make a point to go each time. The staff is awesome and the ingredients are absolutely second to none. The bread they use comes from The Med and is top notch, just perfect for holding together gooey cheese and any arrangement of other fillings you might want. I usually get The Brie’s Knees(brie, strawberry jam, greens, and apple) with turkey added to it. My husband is a fan of their tuna salad grilled cheese, the salad looks to be made with albacore and is delicious. They also have other excellent fillers like bacon, black forest ham, pesto, proscuitto, and lots more. Their greens seem to change seasonally; in the summer I will often see arugula or mesculin mix while in the winter I will see chard and green leaf. It’s nice to see they seem to go for what’s fresh. I have also had their soups and fries and those are also excellent. The fries are crinkle cut and seasoned, I would guess perhaps Old Bay? So awesome. I really have no complaints, except I wish they came to my office every day!

Holy moly! These aren’t your Mom’s grilled cheese sandwiches. Keep an eye on this food truck, its an absolute gem. Delicious, and full of style. MMMMmmmm.
