Merge serves up international contemporary slow foods with a side of live jazz or a local singer songwriter. We cater to guests with all sorts of dietary needs including raw, vegan, vegetarian, and organic meats. And that’s just from the kitchen. The bar offers an extensive list of cocktails, wine, draft beers, freshly made juices, and digestive shots.

History

Established in 2009.

Merge is a restaurant created by two sisters with a dream to create a unique space, where people with all different dietary needs can come together to eat, drink, and be merry.

My sister, Eliza, and I opened merge in January of 2009. It was our first venture into restaurant ownership, and it’s been quite a ride!

In an attempt to become more connected to our food, Eliza and I started our own organic farm in the spring of 2012. You can see more about the farm online at merge​buf​falo​.com. We grow tomatoes, peppers, kale, rainbow chard, and a wide variety of heirloom and organic produce, which we use at the merge. But, don’t worry, we still buy plenty of produce from our local farmers!

The more I learn about food and work with food, the more I want to continue learning and working.

I’ve recently taken on pastry chef duties at the restaurant, and I love rolling in the dough… (bad baking pun). But, really, at merge, we’re just passionate about food.

And music and art.
