History
Established in 2011.
Bistronomic is the result of a longtime dream realized for Executive Chef Martial Noguier.
The Paris-born chef staged under Alain Ducasse and Jacques Maximin before taking the helm at several reputable kitchens including the iconic D.C. restaurant Citronelle, One Sixtyblue — where he earned three and a half stars from the Chicago Sun-Times — and the acclaimed Café des Architectes.
As Executive Chef/Owner of Bistronomic Martial Noguier has had his hand in not only the development of the menu, but every element of the restaurant, from its concept to the décor. Bistronomic is the French native’s casual reinterpretation of the traditional bistro; where he fuses his international culinary pedigree with ingredients from local and sustainable sources to deliver diners an affordable yet sophisticated, farm-to-table experience.

Business Owner
Originally hailing from Paris, France, Chef Noguier worked for a number of French chefs before coming to America. He continued to gain experience while serving as Executive Chef and Chef de Cuisine for various prestigious hotels and fine-dining establishments such as Patina in California and Citronelle in Washington D.C. before relocating to Chicago.
Prior to his position at Bistronomic, Noguier served as Executive Chef and Corporate Chef at the Pump Room in the Omni Ambassador East hotel as well Executive Chef roles at one sixtyblue and Café de Architectes at the Sofitel Chicago Water Tower. Under his tutelage, one sixtyblue was named the «Best Restaurant of 2006» by the Chicago Sun-Times, and he received additional accolades from local media, including the Chicago Tribune, Chicago Magazine, and North Shore Magazine. Chef Noguier was honored as «Chef of the Year» by Chicago Social magazine and received his first James Beard Foundation Award nomination among other recognition.
