Chef Sebastian M.

Manager

Sebastian Matheja is the Executive Sous Chef of the Hilton Hasbrouck Heights. Sebastian started cooking at a very young age and has been in the Hospitality Industry for over 14 years, leading him to his completion and certification of his apprenticeship training at the age of 18 in 2001.

Originally from Pirmasens, a small City in the State of Rhineland Palatinate, Germany, near the French border. His passion for Food and Travelling has led him to experience and work at places in Germany, London (UK), Anaheim (California) and Saint John (Canada) before moving to Hasbrouck Heights, New Jersey in the summer of 2013

Being with Hilton Hotels for over 9 years, Sebastian has achieved many Hilton Corporate awards and Certifications, including the Spirit of Hilton Award in 2011, one of the highest recognition awards within the Company.

Incorporating local ingredients where he can, Sebastian’s favorite products include fresh Figs, Venison, Monkfish and Chanterelles. He also enjoys experimenting

French onion soup is too salty, grilled chicken salad with beets and goat cheese is good but not great. If you are short on time and can’t leave the hotel, it’s a fine place to eat. But that’s it. Just… fine.

server was nice but Very slow service. Memorized my order wrong and bacon cheeseburger was so so. Fries were okay. It’s convenient because I’m staying at Hilton. When I’m back in a few weeks I will most likely take the car out to another restaurant.

Great service, awesome staff personnel, and AMAZING FOOD! The restaurant is close to the lobby of the hotel and is actually open to the public as well as guests!

Wow — what a disaster!
Slowest, most ignored I have ever felt in a restaurant. Our waitress stopped by in the beginning every five minutes when we were first seated — once we ordered — was no where to be seen or heard from. Elysha — be more attentive — or get out of the SERVICE industry. Simple as that.
Ordered the flat iron steak — had decent flavor, but was over cooked. I might have reported had someone stopped by the table to ask — but we covered that in the first paragraph.
After dinner — stopped at the bar to order a wine and flour-​less chocolate cake to take back to my room. Kelly at the bar was great — attentive, nice, even hurried back to the kitchen to see where/​why the cake was taking so long…
In the end — decent, flavorful food with spotty service. Do yourself a favor — sit at the bar.

Lunch here was very good. Quick service too. Waiter didn’t even say, «How are we dourin.» I had the grilled veggie sandwich which was excellent.

We were seated in a relatively short time. We sat waiting to give our drink order for 15 minutes. Which was just water. We ordered our food at the same time as we did our water order. On a side note it seemed the waiter just walked really slow. For someone who is behind with the tables you would think she would move faster.
The manager came by and offered us some free drinks and a snacks which made it a little better. He have us some bread before dinner.
The food took about 55 minutes to come out.
The bbq pulled pork sandwich was fantastic. The fries that came with the sandwich were just ok. A little stale in my opinion. They forgot the salad I ordered as well.
The manger ended comping us our meals which was much appreciated and a correct ending to this experience.

I’ve stayed at the Hilton Hasbrouck Heights a few times now. With Bistro Six Five Zero being the only on-​site dining option, I’ve been forced to eat there quite a few times. To start off, the food is extremely expensive for what it is. A simple burger and fries coupled with a coke will set you back around $ 20, and this is one of the cheapest options. The food is always inconsistent. I’ve had some legitimately good meals. However, the next time I order the same thing it could be a completely different experience. At times the food is not cooked as ordered, or comes cold.
The staff is extremely friendly, excluding a couple of employees. All that being said, I can not in good conscience recommend this restaurant to anyone. I simply go here as it is convenient as my company always has their employees stay here. If you have the convenience of having a car or other means of transportation go someplace else.
