After a wonderful 6 years filled with all of the joy, laughter, challenges and success that comes with producing tens of thousands of cake pops, Just a Bite will be closing its online bakery at the end of September 2015. We will not be fulfilling any orders after September 24^th.

Each cake pop is always made from scratch and individually wrapped. Birthday parties, gifts, weddings, showers, client gifts, corporate trade shows, the options are endless.

Established in 2009.

A little about us. Our founder, Mindy Himmel, has always been active and concerned about diet and nutrition. With a wild sweet tooth, she would typically find herself looking for just a little something sweet. Given the large serving sizes that are so en vogue right now, that typically resulted in a gigantic cupcake, colossal cookie, or a massive slice of cake. What Himmel loved about the idea of a cake pop is that they were decadent, rich, satisfying at just a fraction of the typical dessert serving size.

In the spring of 2009 Mindy saw a recipe for cake pops and made them for a party. They were a hit with friends and everyone else who had a bite. Mindy fell in love with cake pops too and has continued her romance with cake pops ever since. That is how Just a Bite Cake Pops began, a sweet tooth, a little bit of praise and a ton of hard work.

Mindy Himmel received a Bachelors of Science in Business from Arizona State University and is currently President of Just a Bite® Cake Pops. She moved to Orange County in 2009 after spending several years in real estate development in Scottsdale, AZ. A strong advocate for fitness and a healthy lifestyle, while still enjoying an occasional treat, she founded Just a Bite® as an innovative way for health conscious clients to enjoy an indulgent, bite size treat.

While in Phoenix, she was active in Free Arts of Arizona and Phoenix Fresh Start Women’s Foundation as a volunteer and mentor. In addition to her professional endeavors, Mindy Himmel is also a runner and triathlete and has participated in multiple marathons and two Ironman distance triathlons.
