When I was 8 years old, I was looking for a snack while watching reruns one summer day. I saw my mother’s cornbread, from the night before, sitting on the cabinet. Wanting something different from the usual white bread sandwich, I thought to myself, «Hmmm, I wonder if I sliced the cornbread, put some ham and cheese in the middle and melt it, if it would be good?» I did and it was. Even though it fall apart, I ate cornbread sandwiches anytime we had leftover cornbread ever since.
We had a restaurant in 2003 call «Jefferson’s House Of Pies» We added to our menu my mother’s award winning Chicken and Dumplings and knew it needed cornbread to go with it. I got a recipe that I liked and as I was taking out a pan of aroma-filled cornbread, I had a flashback of my invention of a cornbread sandwich. I worked on the recipe that would make our cornbread not only moist but could hold up to different fillings and still be delicious. People come from far and wide to try it.
