History

Established in 2008.

After running several very popular restaurants in Japan We decided to open a restaurant that was smaller in scale and saw a niche for BBQ and have never looked back. Our concept has stayed the same through the years and we strive to improve everyday.

Meet the Business Owner

Mark V.

Business Owner

Mark has worked all over the world. Having been raised in a chef’s family, he has spent over 40 years in the food business. In the early 80’s he went to Europe and worked in France and Switzerland. Upon returning he spent 7 years working with Four Seasons Hotels, then became the Executive Chef at Sonoma Mission Inn. The early 90’s found him in Asian buiiding and creating restaurants in Malaysia, Singapore and Japan. In Japan he met his partner and opened the immensely popular Fujimamas in Tokyo. After marrying his partner they moved here to the Big Island and opened Huli Sue’s which has now been reborn as The Fish and The Hog
