History

The Frog and The Peach has always been a pioneering American Restaurant. Original owners Betsy Alger and Jim Black elevated contemporaty dining in New Jersey with innovative, locally sourced food served in a beautifully renovated industrial building.

Moving forward it will be longtime Executive Chef Bruce Lefebvre’s responsibility to continue that creative sensibility and flair for reinvention.

The seasonally changing menu will always be the soul of the restaurant, and the bar salvaged from the Brooklyn waterfront the «pulse».

Chef Bruce plans to accentuate the industrial elements of the circa 1876 building, which was home to the Home News Printing and Publishing Company as well as a leather suitcase handle factory.

The day after graduating from the Culinary Institnte of America, Bruce started working at The Frog and The Peach. After 2 years he left to further his career in New York City, working for Charlie Palmer at Aureole and doing stagieres at Daniel and Lespinasse. Bruce then returned to The Frog in 2000 and became Executive Chef in 2001. He has the utmost respect and appreciation for Betsy Alger and Jim Black, the founders and long-​time owners of The Frog, for giving him his first «big break» and eventually selling him The Frog and The Peach in 2012.

Chef Bruce is known for his modern take on American Cuisine and for staying true to the authenticity of The Garden State’s amazing agriculture and fisheries. He describes his personal cooking style as one with not only a respect for his classical training but also an eagerness to explore and share influences and ingredients from cuisines and cultures across the United States and the world.
