Our brew bar is the tasting room to our roastery. It is a place to experience our craft and hospitality in its purest form. Designed around simplicity, we always offer two selections of hand poured coffee and two selections for espresso based drinks. Our pastries are made locally by Nuvrei Patisserie. You can also be sure to find a large selection of our current coffee offerings for sale and a barista who will gladly help find the one for you. When the weather is nice we have outdoor seating and we always provide free wifi.
History
Established in 2008.
Coava began in Matt Higgins’ garage in 2008. The veteran barista and roaster bootstrapped the company by repairing motorcycles until he could afford his first roaster. His ambitions were to one day roast and prepare coffees that would be exciting for baristas and inviting to everyday drinkers. To anchor the company he named it after the oldest western word for unroasted coffee. He knew excellent «coava» was essential to everything he wanted to achieve.
As soon as Matt could, he began traveling to the major coffee growing regions seeking farmers whose careful work was producing quality crops with the type of complexity and balance that many single origin coffees don’t have. His willingness to do what others would not eventually earned him a reputation among coffee growers as a respectful, diligent, and honest man. Those early years were adventurous and difficult, but laid the foundation for the many long-standing partnerships Coava has with farmers today.
