Dec 10th 2008, Karen Kimbell Hanson, and Chef Tim purchased Chef TIM’s with SPICES.” What where we thinking?” But we thought it was time to have a good tasting soulfood joint in da I.E. so Jan13th the doors came open and has been thriving every since. We are now in our 3rd YEAR. so much more to come, Breakfast, and Soul Dinners are almost here. Frozen soulfood dinners, Ready to heat and Eat

Although trained as a cook, Chef Tim’sreal expertise in food preparation did not come from a culinary training kitchen, but from Mama Hannah, his foster mother. Tim was born in a reform school for women and he came to live with Mama Hannah at the age of two. His earliest memories of his childhood were in the kitchen following his Mama Hannah around. At that time he was receiving the training for his future calling. At 18, Tim joined the Marines and traveled the world, when he returned home to Akron, Ohio, he landed a job at St. Thomas Hospital. One day an opening appeared for a grill cook. Tim applied and got the job.” I didn’t dream of becoming a chef nor did I set out to become one”, but I always loved to cook. I developed a heartfelt passion for cooking and I haven’t STOPPED.
