History
Established in 1982.
Sybil’s Omelettes Unlimited is a family-owned, iconic restaurant in Salem. The owners and staff recognize that it has earned this distinction because of the loyal customers.
The restaurant opened for business in 1982. Sybil’s, however, was not added to the name until 1986. For those who don’t know, Sybil is the name of the chicken pictured in the logo wearing her cooking apron, with her wooden spoon ready to stir up a short stack of pancakes or one of the 110 omelettes available each and every day.
The friendly staff is well known to regular customers, but the family behind the scenes likely is not. Dr. Wolfram and Dorothee Gottschalk have owned Sybil’s for 30 years; since its beginning. Their children all worked there as cooks, dishwashers, wait staff and management. Dr. and Dorothee’s teamwork kept Sybil’s going and they always made sure the dedicated managers and staff were recognized for their very hard work.
