We specialize in premium meats, specialty sausages, and a full service meat counter. We have an excellent dry aged beef program as well. We provide a full range of services from custom processing to hard to find ethnic specialties. Our new additions include Durham Ranch Bison Rib Eye, Jidori Chicken, Kurobuta Pork, Silver Fern Farms Venison, and Winsor Bayou Alligator.
History
Established in 1994.
Jacob Kappeler emigrated from Switzerland in 1963 in the hopes of establishing a full line of delictable sausages from recipies passed down in his family, from the 16th century. This was eventually expanded to a full service market upon his move to San Marcos from Brawley. After winning numerous awards over the last 20 years, Jacob decided to retire and pass on the torch to Chef Dave Krohn. Chef Dave has been using Jacob’s products with great success with his catering company that he has own for the last 10 years. «When I found out the shop was for sale, I knew I wanted it,» says Chef Dave. He has kept the staff and the recipes the same, and looks forward to continuing the traditions started by the Sausage Meister himself. Please check out our ever-expanding grocery line of pickles, sauerkraut and mustards; as well as our Certified Angus Beef, fine poultry and pork, farm-raised game animals, and of course our award-winning sausage!

Business Owner
Dave Krohn started cooking at the age of 15. He worked his way up through the ranks cooking at various restaurants on the East Coast. While attending college, studying business, he decided upon graduation to go to Culinary Institute of America in Hyde Park New York. Chef Dave graduated with honors in 1999 with a degree in culinary arts. After graduation, he worked at many award-winning hotels and restaurants which include: The Castle in Tarrytown New York; The Four Seasons in Georgetown; and Taberna Del Alabedera in Washington D.C. After 9/11, Dave decided to enlist in the United States Marine Corps. as an infantryman. He was stationed at Camp Pendleton, Marine Corps Base, California. After two deployments to Iraq, Chef Dave decided to start his own catering company here in California. Chef DK Catering has become a leader in the food industry in Southern California and just celebrated its tenth anniversary. And now Chef Dave is excited to expand his knowledge as owner of T&H Meats!
