Meet the Manager
Mark S.
Manager
Mark Schwartz’ first and greatest influence to this day remains «Il Bistro» located in the Pike Place Market. It features the best Italian cooking in Seattle, combining simple elegance with old world tradition and incorporating the freshest foods possible bought right there in the market every day.
Pike Place Market became Mark’s culinary school. Nothing is more valuable than learning from all the local vendors how to choose the best, freshest foods available. The market had it all: local food as well as imports from all over the globe. The smell of prosciutto, capicolla, and aged cheeses hanging in the DeLaurenti’s Deli continue to be embedded in his mind.
It was the dashing young Italian named Joseph Cairo, one of the original owners of Il Bistro who saw Mark’s potential and took him under his wing to train Mark in the art of cuisine as well as the style of service, romance, and charm that make fine dining an unforgettable experience.
