Contemporary reinvention of traditional Tonkotsu ramen. Our Tonkotsu soup is made from scratch using simple but quality ingredients, such as Berkshire pork bones and fresh local vegetables. We also offer vegetarian option of Shoyu ramen, which is made from scratch using shiitake mushrooms and other vegetable broth. All ramen we serve, are mu-ten-ka, which means, no additives such as MSG, nor preservatives.
Our ramen is crafted one by one, starting with the perfect blend of tare (various essence such as white soy or anchovy sauce) and broth, perfectly cooked noodles, finished with the fresh vegetables or house-made toppings.

History
Established in 2013.
After serving sushi as Snappy Sushi for 5 years in Davis Square, we decided to change our concept from sushi to ramen. The transformation happened in October of 2013 ! The same creator of contemporary brown rice sushi for Snappy Sushi is now serving reinvention of traditional Tonkotsu ramen. Team of Japanese chefs are crafting new-style ramen using locally available ingredients, and offering seasonal menus.
