History
Established in 2005.
After 25 years of working as a chef in New York with his wife at Rene Pujol restaurant, Claude decided to pursue his dream of making chocolate in his favorite city St. Augustine. Thanks to his best friend Jacques Torres who is an amazing chocolatier, Claude and Nicole were given the opportunity to train with him for six months before leaving to Florida. Claude is the chocolatier and Nicole cares for packaging and the front of the house.

Claude was born in the southwest of France. As He was growing up food and cooking were his passion. To pursue his ambition Claude went to culinary school in Toulouse. He trained several years in fine dining establishments there. Going to the U.S.A. was another dream Claude had. In 1973 he came to work as a French chef in New York city at Rene Pujol restaurant. There he met his wife Nicole and ever since they have worked side by side. Claude enjoyed cooking for many years. His love of chocolate came later as he watched his best friend Jacques Torres making all his delicious confections for his shop. He decided then that when he left NY for the quaintness of St Augustine, Chocolate would be his next adventure.
