Business Owner
I opened Taus Authentic in February 2015 as a tribute to my father who inspired me to be a chef. I started my career studying at The Culinary Institute of America in New York and spent the next few years working in kitchens across the country like Le Titi De Paris and Charlie Trotter’s in Chicago, as well as Patina in LA. Shortly after I opened my first restaurant, Zealous in the River North neighborhood of Chicago, where I spent 19 years. At our new restaurant we strive to provide a high level of food within a casual environment, taking flavor inspiration from my Italian-Austrian roots as well as travels. We use organic and local whenever possible, and always have the flexibility to accommodate any dietary needs. In my spare time I’m active in the Trotter Project organization where we focus on mentoring and educating students in the hospitality industry. Come in and see us.
