Specialties
Specializing in locally-roasted, ethically sourced, single origin coffees in a modern, comfortable setting, you’ll find the perfect drink to enhance your day at Novo Coffee. A rotating selection of coffees are featured on the pour-over bar, cold brewed iced coffee is available on nitrogen tap, and the espresso pulled on our custom Slayer machine highlight different components of coffee. Our complex chai and delicious syrups are made on-site. For the afternoon? Belly up to the bar for a local beer, cider, wine, or kombucha.
History
Established in 2012.
Novo began back in 2002 – spearheaded by father-son duo Herb and Jake Brodsky, they began sourcing and roasting green beans. Over a decade later, we now have three café locations to highlight their expertly roasted beans. We still roast locally, right over on 32nd and Larimer.
Meet the Manager
Emily C.
Manager
Born and raised in Seattle, I’ve worked in craft coffee since 2005. When I moved to Colorado, my quest began to find the best coffee in the state – which led me to Novo. I elbowed my way in – you have to make yourself known at places you *need* to be a part of – and haven’t looked back since. Steaming milk is my meditation, pulling incredible single-origin shots makes me proud, and crafting pour overs for people who love coffee makes me smile.
